Our 53% Waslala Dark Milk is made with single-origin cocoa beans from the remote Waslala region within the central highlands of Nicaragua. Few paved roads connect the country’s second-largest city, Matagalpa, to Waslala, making the journey difficult and long. Brix tests ensure optimum ripeness is reached at harvest to deliver consistently high-quality cocoa beans. The fresh beans then undergo a specific fermentation process to meet our characteristic preferences. The resulting 53% Waslala Dark Milk strikes a nuanced and expressive balance between dark and milk chocolate.
Features: Our single-origin chocolates, ground to 6-8 mm pieces for pastry and baking applications. Well-rounded, deep and complex flavors, framed by a silken texture.
